Clarified Margarita
Ingredients:
1 (750 ml) Bottle Blanco Tequila
12.5 oz Dry Curacao
15 oz Fresh Lime Juice
7.5 oz 1:1 Agave Syrup (mix equal parts water and agave syrup to make)
10.5 oz Whole Milk
A heavy pinch of Salt
Instructions:
1. In a large container, combine all ingredients except the milk. Stir well.
2.Gently pour 10.5 oz of whole milk over the mixture. The milk will curdle due to the acidity, creating curds that will act as a natural filter.
3. Allow the mixture to sit for an hour as the milk curdles fully.
4. Carefully strain the mixture through two damp coffee filters into another container. The first drips will be cloudy; reintroduce them to the filtering process for a clearer result.
5.Continue filtering until all liquid is passed through. This might take patience, as the process is slow but essential for clarity.
6. Once fully filtered, discard the milk solids. The resulting liquid will be your clarified margarita, which can be stored on a shelf or in the fridge.

I did a 2:1:1:.5 of tequila, simple syrup, lime juice, cointreau and then added milk to clarify. It turned out smooth and sweet

I’ve noticed that it tastes great upto a few days but the longer I keep it, one week plus, the taste is slightly bitter… like the bitterness of lime peels coming through. Am I doing something wrong?
