Mortadella Sandwich 🥪

Ingredients
6 bundles of mortadella, thinly sliced
1 splash EVOO Terra Delyssa
6 slices provolone
2 soft buns
3 tablespoons mayo
2 tablespoons spicy Dijon
4 twists black pepper
Method:
1. Heat EVOO to medium and crisp up mortadella. Flip and top with provolone. Remove from the pan when softly melted.
3. Dress buns with mayo and toast (aggressively) in a pan.
4. Add Dijon and mortadella. Finish with black pepper.
5. Cut and serve. You might need a few napkins.

Tried it found it WAY to salty
I went to a place in Hội An where Anthony Bourdain said had the best Banh Mi in the world. I asked for the one he ordered and they said it wasn’t on the menu and they made it special for the show.

Saw this same thing (different people) on another post.
The problem with bologna is that it gets chewy. Mortadella has fat pockets that render as you cook it and it's not chewy at all. Think of mortadella as like a cross between bologna and bacon!
