You realize this still runs in through the cloud? You quite literally give Apple permission to the note with confirmation of sending. You’re better off using iMessage to iMessage
There is no share link option
Anything sent via any network is capable of interception!

To keep Apple from spying on you, create a new note (on the Note app created by… Apple), the send some one a link to share that note using the Messenger app ( also created by Apple, that is running on your Apple iPhone. LMAO
