Ingredients:
• 3 large eggs, at room temperature
• 2/3 cup (160 ml) whole milk, at room temperature
• 2/3 cup (80 grams) all-purpose flour
• 1/4 teaspoon salt
• 1/2 teaspoon vanilla extract (optional)
• 4 tablespoons (56 grams) unsalted butter
• Powdered sugar, for serving
• Fresh lemon wedges, for serving
• Fruit (berries, sliced apples, or pears), for serving (optional)
Instructions:
1. Preheat the Oven and Pan: Preheat your oven to 425°F (220°C). Place a 10-inch cast iron skillet or an oven-safe pan into the oven to heat up as well.
2. Make the Batter: In a blender, combine the eggs, milk, flour, salt, and vanilla extract (if using). Blend until the batter is smooth, about 20-30 seconds. Let the batter rest for a few minutes; this can help eliminate any air bubbles and ensure a more tender pancake.
3. Prepare the Pan: Carefully remove the hot pan from the oven. Add the butter to the pan and swirl it around until it’s completely melted and coats the bottom and sides of the pan. Be quick but careful to avoid burning the butter.
4. Bake: Pour the batter into the center of the hot, buttered pan. Immediately return the pan to the oven and bake for about 20-25 minutes, or until the pancake is puffed up and golden brown on the edges. Avoid opening the oven door during the first 20 minutes of baking to ensure that the pancake properly puffs.
5. Serve: Once done, remove the pancake from the oven. It will quickly deflate once it’s out, which is expected. Dust with powdered sugar, and serve with fresh lemon wedges to squeeze over the top. Add fruit on the side or on top if desired.
