    Hello all. Historically, the crème brûlée was stove top cooked custard only. It was not baked. The oven baking method was developed later and for ultra large feasts in places like Versailles when innovative pâtissiers started baking the uncooked custard in the water bath method we’ve come to know as the Bain Marie.
