Paper-Baked Salmon w/ Honey Soy Garlic Glaze
Preheat oven to 400* F
Whisk together 2 tbsp. honey, 1 tbsp. soy sauce, and 2 cloves of minced garlic. (Enough for 4-6 fillets.)
Season each piece of salmon with sea salt, pepper, and paprika.
Place a fillet on a piece of parchment paper. Brush with glaze. Fold paper over the salon then pinch around to make a pocket.
Place paper pouches on baking sheet and cook for 20-25 minutes for cooked through. (Cook only 15 min. for medium rare- raw stripe in the center…)
Sprinkle with chopped chives or fresh herbs for serving, if you like.

P. S. for a less sweet sauce, add a spritz of lemon juice. For heat, whisk in 1/2 tsp. cayenne pepper.
P.P.S. There are lots of opinions on “perfectly” cooked salmon using en papillote method… My roasting time is for just cooked-through. Go for less time if you like a cool center. ;)

Easier recipe: light olive oil, seasoning of your choice. Create a little pocket with foil. Set your fish in the pocket on top of little oil and slice of butter. Cover but on the grill not on direct flame. 20-25minutes 375-400°. You’re welcome
