Julian needs to take a baking lesson or two! Or just watch one of the gazillion videos on YT that show how to make this particular type.
This bread is made in many countries and depending on location the name changes… sadly it’s not a “rare” bread and easily available in the US. Importing bread or anything from long distances is a bit too much considering global warming & carbon footprint…. not a judicious choice on the part of restaurant.
