EASY MIDDLE EASTERN CHICKEN & POTATOES! (With a twist 🍷)The best part…ONE PAN! The aroma! The flavors! It doesn’t get much better💕
While adding wine isn’t common in Middle Eastern recipes, my mom discovered early on that adding a splash to some dishes, really added more flavor. Feel free to use more lemon instead.
Recipe ⬇️
Ingredients-
2-3 lbs chicken pieces (I used bone-in thighs)
2 lbs potatoes peeled and cut lengthwise
2 tsp kosher salt
1 tsp black pepper
1 tsp Aleppo pepper
1 tsp ground cumin
1 tsp dried oregano
1/4 cup lemon juice
1/2 cup red wine
4 cloves crushed garlic
1 heaping Tbsp tomato paste
1 heaping Tbsp pepper paste
Note-If you don’t want to use wine, substitute with more lemon juice!
Directions-Preheat oven to 375 (convection setting)
Add all the ingredients to a baking dish. Combine well and arrange potatoes under the chicken. Cover and bake for 45 minutes. Uncover, and baste the chicken with the juices. Raise oven to 400 degrees and continue baking another 15-20 minutes. Serve with Lebanese rice (recipe is on my feed!) I hope this becomes a favorite in your home, too!
