Our signature one pan potatoes but with fingerling potatoes.
Serves: 2-4
Prep time: 6 minutes
Simmer time: 25-29 minutes
Special tools: large sauté pan.
Ingredients:
Potatoes
1 lb baby fingerling potatoes
1/2 litre chicken stock or just enough to cover (barley)
2 cloves of garlic, chopped
1 shallot, sliced
1/2 stick butter 1/4 cup
1 chug extra virgin olive oil Terra Delyssa
Garnish
½ tsp pepper
1 tbsp parsley, chopped
Method:
1. In a large sauté pan, barley cover potatoes with chicken stock.
2. Add butter, shallot, garlic and olive oil.
3. Simmer until potatoes are soft and larger bubbles appear.
4. Plate potatoes and glaze with pan sauce.
5. Finish with black pepper and chopped parsley.
Side note: First of the season makes a huge difference with fingerling.

How do you get the creaminess? Tried numerous times and is watery not creamy.
I just made these… oh my god they’re the best potatoes I’ve ever had. Only problem is it’s very hard to find fingerlings around here so I’m gonna have to try this with a different potato
