With my cookbook ‘Comfy’ coming out next month (🤯) I wanted to drop in and give you another exciting insight about what you can expect!
As I was writing the book, I was really focused on ensuring it wasn’t a ‘one-trick pony’ kind of deal. Something you whip out on a cold day when you’ve got some spare time for a cooking project. Don’t get me wrong, I’ve packed the book with recipes to warm your soul - lots of which benefit from longer cooking times to bring you incredible flavours and textures.
But I’ve really made sure you’re going to get heaps of use out of the book, by ensuring it’s loaded with dinners for every mood and occasion (yes, even that). Many recipes come together in a pinch and take such little effort to whip up. These are also recipes you can devour all year-round! Not that you’ll ever see me shying away from eating a Loaded Baked Potato Soup in the depths of Summer 😅
With that in mind - I couldn’t resist sharing my Creamy Garlic Mushroom Chicken! It’s one of those dinners that’ll land on your rotations and never leave. It’s easy, quick to make, outright delicious and perfect to make any day of the week, any time of the year. I know this recipe is loved by many, so there’s no way I couldn’t not include it in the book!!

Thank you so much for the reciepe i made it for me n my husband a few days ago but we added lightly spiced potatoe wedges. Theres somethin about the cheese that gives nuttiness n the moreish flavour of the mushrooms n chicken
