Y’all, we are die hard Duke Mayo fans here, but it’s made from Soybean oil, which is a major inflammatory food, and it’s just not something we want in our lives!
So a few year ago I learned how to make this homemade Mayo, and let me tell you its delicious. There’s really bo reason to buy it anymore because it’s so easy to make.
****This Mayo lasts 1-2 weeks, in an airtight container in the fridge or up to one month if you use pasteurized eggs. ****
Here’s what you need:
HOMEMADE MAYONNAISE
2 Cups LIGHT TASTING olive oil(or another MILD FLAVORED oil of your choice)
2 Room temp eggs(Egglands best are pasteurized)
2 tsp mustard
2 Tbsp white vinegar
Pinch of salt to taste
Place all the ingredients is a mason jar. Place immersion blender at the bottom, then turn on high, and leave at the bottom until it starts to emulsify. Bring blender bar up slowly as it’s transforms into Mayo and slowly repeat until all the oil is whipped into Mayo!
Taste and adjust salt or mustard as needed!
Enjoy for up to 2 weeks in the fridge.

Could using apple cider vinegar ruin this? I did this and it's not creaming up at all...how long are you blending to get to that cream? Thanks so much
1st trial: too soupy. Tried adding more oil, only helped some. Then tried adding a little more here and there oil & vinegar. Then it got worse 😂
2nd try: used high speed emulsifier and exact measurements 2C oil, 2 tbsp vinegar, 2tsp mustard, 2 eggs, pinch of salt. Turned out good right away! Thanks for sharing!
