INGREDIENTS
1 cup almond flour, plus more if needed
½ cup Greek yogurt
3 tablespoons sugar, divided
2 teaspoons pumpkin pie spice, divided
¼ teaspoon salt
Oil spray
INSTRUCTIONS
1. In a medium bowl, mix almond flour, Greek yogurt, 2 tablespoons sugar, 1 teaspoon pumpkin pie spice and salt until a soft dough forms. Add more almond flour is needed so that the dough is soft but not sticky.
2. Using a medium spring-loaded cookie scoop, scoop about 1.5 tablespoons of the dough, roll into a small ball, and place it on parchment paper. Repeat with the remaining dough and you should get about 9 donut holes.
3. Lightly spray the air fryer basket with oil and arrange the donut holes in a single layer on the parchment paper. Spray the donut holes with oil.
4. Air fry at 350°F for 7–9 minutes, or until golden and puffed.
5. Meanwhile, mix the remaining sugar and pumpkin pie spice in a small bowl and set aside.
6. Immediately roll the warm donut holes in cinnamon sugar to coat and serve.
