I crack the eggs over a strainer to allow the runnier part of the whites to fall through, then place the yoke + remaining thicker white portion in a ramekin or small cup very carefully so as not to break it. I poach my eggs as you do, at a good simmer with some vinegar, but may leave them in for 3-4 minutes as I eat them pretty much directly out of the pan, skipping the water bath / boil for 1 minute steps. I use the them for cilbir, on avocado toast, eggs Benedict, on salads, whatever.

I’ve made so many poached eggs since this has been posted.. finally can say at the ripe age of 29 I can perfectly poach an egg 🥚

Ok tried this last night with friends and great anchovies brought back from Portugal - the bomb!!!! People LOVED it! Will definitely make again for brunch, thanks a lot!!!!
