CHICKEN BRINE
3lbs chicken thighs/legs (bone in)
4c dill pickle juice
1tbs sugar
1/2tbs salt
FLOUR DREDGE:
2.5c all purpose flour
1c cornstarch
1tbs salt
2tbs paprika
1tbs garlic powder
1tbs onion powder
1tbs cayenne
1tbs fine black pepper
BATTER:
2c cake flour (all purpose is fine)
2c cold water
PICKLE POWDER:
- drain dill pickles and dehydrate in the oven at 170 overnight.
- Once they are fully dehydrated, grind into a powder
- brine the chicken overnight (up to 2 days)
- Drain and pat dry
- Dip into the batter, then the dredge
- Fry at 300 for 4-6 minutes depending on size
(3-4 minutes for boneless)
- drain and cool for 30 minutes
- Fry at 325 for 3-4 more minutes (2-3 for boneless)
