My husbands favorite dinners comes from a restaurant in Providence, RI called Al Forno. It’s one of his favorite Italian restaurants to eat at and this is his favorite dish from there
We are all familiar with the classic Italian combination of meat and fruit. Prosciutto and figs or melon comes to mind, but add Sausage and grapes to that list as well.
The marriage creates a fabulous and unexpected medley of flavors and textures.
The wine and balsamic vinegar in this dish give it incredible depth of flavor and the fact that there are so few ingredients in this dish will make you want to create it over and over again.
This is terrific over mashed potatoes, rice or polenta

Roasted Sausages and Grapes
3 pounds Italian sausage (hot, sweet or combo of both)
3 tbls butter
5 to 6 cups of seedless grapes. Red or green and stems removed
1/4 cup red wine
1/4 cup balsamic vinegar
Preheat the oven to 500F.
Parboil the sausages in water to cover for 8 minutes to rid them of excess fat.
Melt the butter in a large heatproof roasting pan, add the grapes, and toss to coat. Over moderately high heat add the wine. Stir for a few minutes until the wine has reduced by half.
Add the sausages back to the roasting pan and push them down in the grapes. Roast in the oven, turning the sausages once, until the grapes are soft and the sausages have browned, 25-30 minutes.
Place the roasting pan on top of the stove over a medium-high heat and add the balsamic vinegar. Scrape up any browned bits on the bottom of the roasting pan, and allow the vinegar and juices to reduce until they are thick and syrupy
*optional, sprinkle dish with chopped fresh herbs (I used parsley and fresh thyme)

I was so intrigued by this video that I made it tonight! I served it over mashed potatoes. This far exceeded my expectations. It was so - SOOO - delicious! My husband and 10 year old son devoured it.
