As a chef, this is just my opinion on pasta quality 👨🍳🍝
Pasta that looks very yellow is often the result of faster industrial drying. In my experience, when pasta is dried slowly, it tends to keep more of the natural flour colour, a better al dente bite, and it usually holds the sauce more beautifully.
Of course, everyone has their own taste — this is just how I judge pasta when I buy it. Always choose what works best for you.
