The best French Toast we’d never heard of is...Spanish! Torrijas aren't for breakfast; instead of milk, they’re soaked in orange juice and sherry, which gives them the flavor of an adult dessert. The lack of dairy (no butter in the pan) allows for clear, clean, bright flavors of zest and spices to shine through. (Chris Kimball did eat this before lunchtime. A special treat on shoot days.)

I was told by Jacques Pepin the French are the best at scrambled eggs multiple ways. So we went to France. Traveled all over France. Never found scrambled eggs on a single menu

Sounds great. What kind of sherry? Sweet or dry, cooking or drinking?
If using Port, this becomes the classic portuguese/brazilian "Rabanada".

Torrejas it’s what it’s called in Cuba. In Spain theyre definitely Torrijas.

I come from Spain and sherry is not a common ingredient in our torrijas. Some people soak them in red wine, but most are soaked in milk, cinammon and lemon zest.
