By far my most requested recipe when hosting a dinner party. Everyone wants the Potatoes Dauphinoise. They are a French classic and worth the few minutes it takes to mandolin them out. Okay massive question here. When working with potatoes anytime, do you soak them in cold salt water for a time before cutting them for this recipe?
Does potato variety matter for this dish? I’m assuming russets but just want to make sure. Also did you soak the sliced potatoes? What was that and for how long did you soak?
What type of BAKING DISH would ya’ll recommend if I wanted to make a serving size enough for 20 people? Should I just use multiples of my crockpot insert (like the pan she’s using here) or is there a baking dish large enough to accommodate that much? I’m thinking like 10-15 pounds of potatoes. 🥔
