It’s been one year since I posted this video that went viral, and Instagram has since decided to kill the audio (RIP) on the original post, so I thought I would bring it back! Especially since Memorial Day weekend is here, which could be considered the official start of grilling season. 👀
A few things I would like to clear up, based on the response to this video last time (lol):
I am aware that Mexican street corn (elote!) exists, and I find it to be delicious. This is not meant to be that—this also doesn’t have cotija cheese… or crema? It’s a different thing? Two things can exist at once? But I knew about elote before I had ever heard of corn ribs. Mexican food is my favorite food. ❤️
On that note, I never claimed that I invented corn ribs or that this was like… a revolutionary thing? I’ve had them at restaurants and it’s literally just something I wanted to try and make myself. It’s not that deep! Also I didn’t come up with the idea to call them “corn ribs” so don’t come for me about that! Although I do think it’s hilarious that meat eaters get so upset when non-meat things have meat-adjacent names.
I’m not gonna lie, cutting them is the hardest part—it’s not easy! BUT, I will say that once the corn is cut into strips you get a more even cook on the grill and the seasonings are able to coat more of the kernels, which does make for a very tasty bite. It might be worth the extra effort to you, or it might not.
Lastly, I’m sorry I said “it’s fire.” Admittedly, that is cringe. But also there is a lot of pain and suffering in the world, so in the grand scheme of things, I don’t think it’s the worst offense? But if you want to take out some of your frustration on me, I understand, and please go ahead! The engagement helps my account grow. 🖤
